Justin's Perfect Chocolate Chip Cookies

Chocolate chip cookies are probably my favorite dessert of all time. Well it's really close between them and brownies because they're both chocolaty and delicious. I've tried countless different recipes for chocolate chip cookies and I enjoy all of them but I really wanted to come up with a (slightly) healthier recipe and create my own unique version. After a lot of trial and error I came up with a cookie recipe that cooks perfectly, has the right level of sweetness, and maintains a soft texture for days. The perfect chocolate chip cookie.

Chicken Salad Tacos

Tacos are the best! Seriously, they are one of the greatest culinary creations of all time and definitely one of my favorite foods. Tacos can come in a million different forms and all be delicious and the recipe I have for you today is just one of a seemingly infinite number of great variations. This particular recipe arose out of a desire to create a light and healthy taco that still packs great flavor. This is a taco you don't need to feel guilty about eating.

Grandfather's Homemade Mac and Cheese

My grandfather, Lee, recently passed away and he was a really incredible human being and a wonderful role model for our family. Everyone who met him was inspired to be a better person and I can only hope to one day have his strength of character. I was reflecting on his life with some of my family and we all remembered his amazing baked mac and cheese that he would make for us when we were younger and I just had to find the recipe and make it again to share it with you all. Since, that's kind of my thing. I know this will bring back a lot of great memories for my family and I hope that the rest of you will enjoy this delicious recipe for Homemade Mac and Cheese!

Roasted Garlic Vegetable Soup

When I was growing up, I was never a big fan of soup. To be fair, I also lived in California in the continuous scorching heat so soup probably isn't as popular down there overall. However, as I have grown older, I have learned to appreciate soup for its health benefits and comfort value now that I am up in the dark and rainy Pacific Northwest. I have also learned to appreciate how easy it is to prepare in large quantities and reheat for leftovers. That being said, I have been experimenting for the last few years making all kinds of soups with whatever vegetables I happen to have on hand and this recipe was killer. This Roasted Garlic Vegetable Soup is healthy, delicious, bowl-licking good soup that is also light and vegan!

Coconut Crusted Tofu with Pineapple Fried Brown Rice

This recipe is amazing. Absolutely one of our new favorites and another idea that originally came from another recipe and over time became my own. I've made this Coconut Crusted Tofu several times now and every time I've made something else to go with it. It is great with pasta, quinoa, and rice and would be a great addition to any other dish you want to try it with. But I've also included a recipe for Pineapple Fried Brown Rice that is soo delicious and goes perfectly with the Coconut Tofu. (The recipe I created for the rice was my take on a local Thai restaurant's pineapple fried rice and Heather said that mine was even better!)

Grilling Vegetables

I love to grill. It's probably my favorite way to cook and that's most likely because I get to be outside and cook at the same time. I also love nature and right now I happen to have a pretty great backyard to grill in, complete with a nice grill and a big round picnic table with plenty of seating for us and lots of friends. It's no wonder I use the grill every chance I get!

Classic Pot Roast

Pot Roast has always been one of my favorite dinners. I mean, how can you go wrong with a big hunk of beef mixed with vegetables cooking in their own juices for hours? Fortunately, this is also a really simple and easy dish to prepare. It only takes about 10 minutes of prep work and then your Crock-Pot, Rice Cookeror Instant Potdoes the rest of the work for you!
